Chocolate Chip Banana Bread

 

I found this really yummy recipe at Marty’s Musing blog and just had to try it with my grandchild.  I always think of things to do when my grandchild is with me for our bonding time and when i saw this recipe, I knew this would be a good bonding activity for us.  Not to mention we love sweets…This was perfect.  So off to the grocery I went and bought all the ingredients, very easy to find ingredients or maybe you already have it in your kitchen.  You have got to try this, its easy to do and not expensive.  We had a blast doing it.  My grandchild was licking the batter even before we baked it and all she could say was uhmmmmm  YUM!!!!  So let me share the recipe with you guys.

 

CHOCOLATE CHIP BANANA BREAD  (recipe adopted from Marty’s Musing)

 

Ingredients
  • ¾ cup sugar
  • 1½ cups mashed banana (3 large)
  • ¾ cup vegetable oil or butter
  • 2 eggs
  • 2 cups all-purpose flour
  • ½ cup chocolate chips
  • 1 tsp baking soda
  • 2 tsp vanilla
  • ½ tsp baking powder
  • ½ tsp salt
Instructions
  1. Grease loaf pan (approximately 9x5x3) with shortening and flour.
  2. Mix sugar, bananas, oil and eggs in a large bowl with a wooden spoon.
  3. Stir in remaining ingredients and pour into pan.
  4. Bake at 325 degrees for 60 to 70 minutes or until wooden toothpick inserted into center of bread comes out clean.
  5. If top starts to brown too much cover with foil until done.
  6. Let cool 10 minutes, loosen sides of loaf from pan and remove.

You can also cook in smaller loaf pans but decrease cooking time.

 

So there you have it…It was really good 🙂  My grandchild and I had a fun time doing this and was so excited to try it and it was delsih.  You can also give it as gifts or bring for pot luck.

Wishy Washy Liquid Hand Soap

I discovered this Liquid hand soap from a friend who gave it to my daughter last Christmas. I was surprised how good it smelt after I used it. It had this refreshing smell that lingered on even after washing my hands.

It comes in different scents, Grapefruit (which is my favorite) Cuucumber, Bubble Gum, Lemon and Tangerine. It can be bought in any Handy Man Stores in the Philippines and it is made in the Philippines, so I doubt it if they sell it outside the Philippines but Im still sharing it especially for those who live here 🙂

I just love using this 🙂

Pico De Loro at Hamilo Coast, Batangas, Philippines

I am fortunate to be working with this project.

Beautiful Hamilo Coast With 13 breathtaking coves.  One of which is Pico De Loro where a Country club, Beach club and Condominiums are up and running. A 2 1/2 hours drive from Manila takes you to paradise.

I am truly blessed 🙂

Ending The Week

Thank God it’s Friday!!!  Or so they say 🙂  Fridays can either be a relief or gives you tremendous pressure especially if you’re in sales.  This Friday is not the end of my work week.  I still had to go to our site project the following day to assist my agent with her clients.  But I’m not complaining….I am blessed to have a job 🙂

For our Friday dress down day, I wore a white see-thru blouse with triangle collar, skinny jeans and a white and black wedge shoes with Pearl necklace and pearl earrings.  I love pearls and every Filipina should have pearls in their jewelry box 🙂

And they say “Thank God it’s Friday!!!”  Oh yeah!!!  After work I headed to the newly opened iHop restaurant to meet a friend who’s visiting from Norway and some other friends.  There was a long waiting time before we were ushered to a table.  Wow, it was a long wait but worth it.

I just noticed this weekend I’ve been wearing white 🙂  Well, you can never go wrong with white, you can pair it with just about anything 🙂  Dawned a loose white shirt with silver metal like pocket, faded skinny jeans and silver Toms shoes, such comfy shoes 🙂  Ready for church!!!

I took this shot right after church.  It was a sunny day, I don’t know why it looks gloomy in this shot but it still looks beautiful.  This Sunday, Zoie (my grandchild) was not able to come with me. I missed her but it gave me time for myself, ME time 🙂  I always like spending weekends with her.  Usually after church she likes me to take pictures of her and she would pose as a model. Hahaha!  If you’ve read my previous blog you know what I mean 🙂  Well, this Sunday, I was by myself thou I miss her but i was able to have time for myself, I moved about without worrying about her.  Hahahaha!  You know how kids are, they are full of energy and I need to keep up with her 🙂  I’m looking forward to seeing her tomorrow.

The Week So Far So Good :)

Valentine Week   Starting the week with my little model grandchild staying over till Monday.  I dawned a black dress to start off another work week and used a red necklace and gray pumps.  Ready for the week!!! Valentine Week Mondays out fit:  Black dress with asymmetrical hem, Red Necklace and bracelet, gray pumps.

Wore a White blouse with a nun like collar, Black Skinny pants,  A slim gartered belt with buckles, Silver open toed heels and pearls for accessories 🙂  White and Black is  always a classic and you wont go wrong with these colors.

Thursday!!!  Valentines day!!!  Went to my daughter’s house to have our Valentine dinner and baked some  Brown Butter Salted chocolate chip cookies!!

There you go….Our Valentines Brown Butter Salted Chocolate Chip Cookies!!  Topped it with some heart marshmallow.  I’m so glad we spent Valentines together and bonded by baking this yummy cookies.  It is always good to spend time with your family and do things together.  It builds fond memories 🙂

I bet you guys want to know how this cookies are done??!!  Let me share it with you as my valentines gift to all of you 🙂

Brown Butter Salted Chocolate Chip Cookies 

NOTE:  RECIPE BELOW IS TO MAKE ONE BIG COOKIE ADOPTED FORM PICKY PALATE BROWN BUTTER SALTED CHOCOLATE CHIP COOKIES GOOD FOR ONE…I just doubled the measurement and opted to make smaller cookies to be able to have more cookies)

  • 2 tablespoons unsalted butter
  • 2 tablespoons granulated sugar
  • 2 tablespoons light brown sugar
  • 2 tablespoons beaten egg
  • 6 tablespoons Gold Medal all-purpose flour
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon cornstarch
  • 1/4 cup semi-sweet chocolate chips
  • 1/8 teaspoon kosher salt
  • 1 teaspoon vanilla
  • heart marshmallows to top the cookies after baking it (optional)

Directions

  1. Preheat oven to 350 degrees F. and line a baking sheet with a silpat liner or parchment paper.
  2. Place butter into a small saucepan over medium heat. Swirl and cook butter until browned, takes 3-5 minutes. Once you see brown bits on the bottom of the saucepan, butter is browned. It will be a golden brown color. Remove from heat. Make sure to let the butter cool for 5 minutes before adding to other ingredients.
  3. In a medium bowl, stir together the sugars and browned butter. Stir in the egg, vanilla, flour, baking soda, salt and cornstarch. Stir in the chocolate chips then transfer dough to prepared baking sheet. Press evenly into a round then sprinkle with salt if desired. Bake for 12-15 minutes, until golden brown. Let cool on cookie sheet for 10 minutes before transferring to cooling rack.
  4. fix cookies in a plate and top with heart marshmallow for an inviting look.  Now, you’re ready to serve 🙂

My Grand daughter had a blast decorating these cookies with heart marshmallows and was so excited to serve it to us.  She had this proud look and her eyes were beaming with joy.  It does not get better than that 🙂

Every Sunday after church, Zoie (my grandchild) asks me to by taho (it’s some sort of tofu drink with syrup)for her.   As we walk going to the car she would ask me to take a photo of her.  Its her photo shoot day, she likes posing like a model (you can see in her pic).  She is one of the best blessings that God has ever given me.

To end a beautiful and packed Sunday, we did some face paper cups which she enjoyed doing and now she is fast asleep LOL!!!  Oh and she wants me to open her a blog too.  She said she will entitle  her blog “Zoie’s Fantastic Pictures, Dreams and Wonders!!”  hahahahaha!!!  Smart kid!!!

Dress Down Red Friday :)

Fridays are dress down days at our office.  We are allowed to wear jeans but no sleeveless tops.  Every month we have a themed color to follow on Mondays and Fridays.  This month the theme is wear something RED, since it is the LOVE month (Valentines).

What to wear?  I just recently purchased a pair of red jeans….PERFECT, right 🙂

The red jeans was perfect for our theme this month. The white see-thru blouse complimented my red jeans.  I like red, its vibrant and gives a lively color to any outfit.

I dawned on some accessories to complete my look.  I love accessorizing, it gives a twist to your look 🙂
