The Week So Far So Good :)

Valentine Week   Starting the week with my little model grandchild staying over till Monday.  I dawned a black dress to start off another work week and used a red necklace and gray pumps.  Ready for the week!!! Valentine Week Mondays out fit:  Black dress with asymmetrical hem, Red Necklace and bracelet, gray pumps.

Wore a White blouse with a nun like collar, Black Skinny pants,  A slim gartered belt with buckles, Silver open toed heels and pearls for accessories 🙂  White and Black is  always a classic and you wont go wrong with these colors.

Thursday!!!  Valentines day!!!  Went to my daughter’s house to have our Valentine dinner and baked some  Brown Butter Salted chocolate chip cookies!!

There you go….Our Valentines Brown Butter Salted Chocolate Chip Cookies!!  Topped it with some heart marshmallow.  I’m so glad we spent Valentines together and bonded by baking this yummy cookies.  It is always good to spend time with your family and do things together.  It builds fond memories 🙂

I bet you guys want to know how this cookies are done??!!  Let me share it with you as my valentines gift to all of you 🙂

Brown Butter Salted Chocolate Chip Cookies 

NOTE:  RECIPE BELOW IS TO MAKE ONE BIG COOKIE ADOPTED FORM PICKY PALATE BROWN BUTTER SALTED CHOCOLATE CHIP COOKIES GOOD FOR ONE…I just doubled the measurement and opted to make smaller cookies to be able to have more cookies)

  • 2 tablespoons unsalted butter
  • 2 tablespoons granulated sugar
  • 2 tablespoons light brown sugar
  • 2 tablespoons beaten egg
  • 6 tablespoons Gold Medal all-purpose flour
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon cornstarch
  • 1/4 cup semi-sweet chocolate chips
  • 1/8 teaspoon kosher salt
  • 1 teaspoon vanilla
  • heart marshmallows to top the cookies after baking it (optional)


  1. Preheat oven to 350 degrees F. and line a baking sheet with a silpat liner or parchment paper.
  2. Place butter into a small saucepan over medium heat. Swirl and cook butter until browned, takes 3-5 minutes. Once you see brown bits on the bottom of the saucepan, butter is browned. It will be a golden brown color. Remove from heat. Make sure to let the butter cool for 5 minutes before adding to other ingredients.
  3. In a medium bowl, stir together the sugars and browned butter. Stir in the egg, vanilla, flour, baking soda, salt and cornstarch. Stir in the chocolate chips then transfer dough to prepared baking sheet. Press evenly into a round then sprinkle with salt if desired. Bake for 12-15 minutes, until golden brown. Let cool on cookie sheet for 10 minutes before transferring to cooling rack.
  4. fix cookies in a plate and top with heart marshmallow for an inviting look.  Now, you’re ready to serve 🙂

My Grand daughter had a blast decorating these cookies with heart marshmallows and was so excited to serve it to us.  She had this proud look and her eyes were beaming with joy.  It does not get better than that 🙂

Sunday….Is my favorite day of the week.  It’s a non stressful free day.  No appointments, No business calls, No dress code and NO TRAFFIC!!!  Sundays are more fun in the Philippines 🙂

I look forward to Sundays.  Being a single mom and grandma (Yes, I am a granny goose LOL) Sundays are usually spent with my daughter and granddaughter ( or more often than not with my granddaughter)  Its church time and bonding time in my book 🙂 Today was another fun time.  After church we headed to the mall to have lunch and did some window shopping (which i like doing lol)  Zoie (my grandchild) had a blast with cupcakes and Ice cream ( i told you it was a free day LOL )

Talk about Sugar high!!!  We went and checked out this new stall at the mall that makes candies right before your eyes (make it candies).  Zoie was glued watching them make candies.  It was actually interesting.  Boy!!  Can I just tell you that candies are made with 80% sugar.  tsk, tsk, tsk!!   Think a gazillion times before you pop another candy in your mouth 🙂

Every Sunday,  Zoie likes to take pictures and pretend to be a model.  She calls it our photo shoot.  This I enjoy doing with her (will post another blog about our Sunday photo shoots) It documents her growing up years and I’m going to show it to her when she grows up.  I’m sure she’ll be embarrassed or maybe have a good laugh of how she was when she was a kid.  I treasure moments spent with her and I’m very thankful and feel blessed that I have a grandchild in somewhat a young age.  I had my daughter when I was 18 🙂  (will post another blog on that too lol)  When my daughter (Aimie) Told me that she’s having a baby, I cried a bucket for many reasons.  One of my lame reason was…Oh my!!  I’m going to be a grandma and thought usually when you’re a grandma that means that your old and your life is at its end.  I was proven wrong!!!  It gave me a new meaning in life, a new-found joy unknown to me before. So now, I cherish each day and look forward to building more memories.

Sundays too, is time to visit other relatives ( it’s not every Sunday though) Today, we also visited my Uncle who suffered from a stroke years ago.  Because of his stroke, he cant really go out that much.  His family prepared dinner for us and he was glad to see us.  It was also very nice to reconnect with our cousins and catch up.  I thank God that we were able to visit our Uncle and make him smile even for a while.  God truly has His ways.

Too bad we were not able to take pictures with my Uncle since he got tired and went to bed after dinner. It was really great to see him and his family.  It made us rekindle fond childhood memories and that’s when you realize you are blessed.

Sundays are the best, don’t you think so???


Team Billie’s Miracle….Soaring high!!!


Miracles do happen!!!  Last year, we were saddened by the news that my nephew Billie (21 yrs old) was diagnosed with cancer, lymphoma,with Hodgkin’s disease.  Amid the doleful news, our family had faith that God will see Billie and us through this journey.

Our family is close-knit, though our brother (father of Billie) lives in another country, we always kept in touch and have a special bond between us siblings.  We are orphans, Our parents have passed away years ago and this made our relationship stronger and cemented.  This situation rocked our lives and tested our faith but nonetheless we choose to believe in Gods miracle hand and trust in Him.   They say all things happen for a reason, He may or may not answer our prayers but He does know whats best for us.

And so Billie’s journey begins….He had to undergo a series of chemotherapy.  Since they live in another country all we could do is to pray and wait for updates from our brother (thanks to Facebook, skype, majicjack, factime etc).  Billie had a positive attitude with all these.  When I would talk to him on the phone, he would always sound cheerful and assured me that he was doing fine.  He posted a picture in instagram shaving his hair off and was totally bald, my heart sunk, I called him and asked him why he shaved his hair off and he just candidly answered “oh because my hair was starting to fall off.”  He dint sound sad at all!!  There was a time that we spoke in facetime after one of his chemotherapy session, He was lying on the bed with his mom, looking weak and tired but never once complained to me.  It was his mom who told me that he had a backache and was not feeling well because of the chemotherapy.  I cannot fathom how a young one who is faced with cancer can have such dauntless strength.  Billie had faith in God and entrusted his life in His hands.

Yesterday, We heard the good news….Billie is now cancer free!!!!  What a wonderful New years gift this is to our family.  A gift of restored life.  We are overwhelmed with Gods answer to our prayers and we are humbled and thankful for this.  We are also very thankful to all our family and friends who offered prayers for our Billie Boy.  May our Lord bless you as He has blessed us.

There is a God who watches over us, He is real and He loves us and takes care of us…..if you let Him.

Miracles do happen….We just had one.
